Fresh Spinach Gratin

Spinach and Swiss cheese come together in a make-ahead gratin, ideal for holiday feasting.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1.5 pounds baby spinach, roughly chopped
  • 1 cup half-and-half
  • 1.5 cups shredded Swiss cheese, divided
  • 0.75 cup dry bread crumbs
  • 3 tablespoons butter, melted
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a large skillet over medium heat, sauté onion in oil until soft and translucent for about 5 minutes. Season with salt, pepper, and thyme. Sprinkle flour over the onion and cook until a thick paste forms, approximately 1 minute.
  • In a large soup pot, gently wilt the spinach by covering and heating on low for about 4 minutes. Once wilted, turn off the heat and mix in the half-and-half, 1 cup Swiss cheese, and the onion mixture. Stir well to blend, then transfer the mixture to a 9-inch gratin dish.
  • In a bowl, mix together the breadcrumbs and remaining 1/2 cup cheese. Pour in the melted butter and stir until well combined. Sprinkle the breadcrumb mixture evenly over the spinach.
  • Place the dish in the hot oven for 20 minutes without covering it. Allow it to cool for 5 minutes before enjoying.
