Creamy, spicy spinach Madeline using fresh spinach for a delicious twist.
Ingredients:
  • 1 (8 ounce) package baby spinach, roughly chopped
  • 2 tablespoons water
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 pinch salt
  • 0.5 cup half-and-half
  • 1 teaspoon granulated onion
  • 0.5 teaspoon granulated garlic
  • 0.25 teaspoon ancho chile powder
  • 1 pinch cayenne pepper
  • 0.66666668653488 cup shredded habanero-flavored cheese (such as Cabot®)
  • 2 tablespoons panko bread crumbs
Instructions:
  • Place fresh spinach leaves and a splash of water in a microwave-safe steamer. Microwave for about 2 minutes until spinach is just wilted. Drain excess liquid and set aside.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a small saucepan over medium heat, melt butter and whisk in flour to make a paste. Season with salt, then pour in half-and-half, whisking until smooth. Add onion, garlic, ancho chile powder, and cayenne, whisking until blended. Stir in spinach.
  • Set aside 2 tablespoons of the spicy habanero cheese. Mix the rest of the cheese into the spinach mixture and transfer to a small oval baking dish. Top with the reserved cheese and bread crumbs for a golden finish.
  • First, bake in the preheated oven for 20 minutes until cooked. Then, switch on the broiler to achieve a golden brown finish in just 1 to 2 minutes. Serve promptly for the best experience.
