Quick and delicious strawberry cinnamon muffins, perfect for breakfast or dessert.
Ingredients:
  • 0.75 cup white sugar
  • 0.5 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup milk
  • 0.5 teaspoon vanilla extract
  • 1.5 cups chopped strawberries
  • 3 teaspoons white sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • - Preheat the oven to 400°F (200°C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • Cream together 3/4 cup sugar and butter in a mixing bowl using an electric mixer until creamy. Then, add the egg and mix thoroughly.
  • Sift together flour, baking powder, and salt in a small bowl. Alternate adding flour mixture and milk to butter mixture until combined. Stir in vanilla extract, then gently fold in strawberries.
  • Fill the prepared muffin cups with the batter. Mix 3 teaspoons of sugar with cinnamon in a small bowl, then sprinkle over the tops of the muffins.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, about 20-25 minutes in the preheated oven.
