Tomato and cucumber salad with garlic croutons.
Ingredients:
  • 4 tablespoons Country Crock® Spread, divided
  • 2 cups Bread, italian
  • 1 teaspoon finely chopped garlic
  • 1 cup sliced red onion
  • 2 large Tomatoes, red, ripe, raw
  • 0.5 medium Cucumber, with peel, raw
  • 0.5 cup chopped fresh basil leaves
  • 2 teaspoons red wine vinegar
Instructions:
  • In a large nonstick skillet over medium-high heat, melt 2 tablespoons of Country Crock® Spread. Add bread cubes and cook, tossing often, until they turn light golden, approximately 5 minutes. Sprinkle with garlic and cook over low heat, tossing, until fragrant, around 30 seconds. Remove from heat and set aside.
  • In the same skillet over medium-high heat, melt the remaining 2 tablespoons of Spread. Cook onions, stirring occasionally, until they are light golden and crisp-tender, about 3 minutes. Remove and set aside.
  • Combine toasted bread cubes, onions, tomatoes, and cucumbers in a large bowl. Drizzle with vinegar, sprinkle with basil, and toss to coat evenly.
