Fresh tomato chutney

Spice up your Indian feast with zesty tomato chutney.
Ingredients:
  • 20.00 ml ghee (see note)
  • 6 fresh curry leaves (see note)
  • 1/4 tsp mustard seeds
  • 1 dried red chilli, crumbled, or 1/2 tsp chilli flakes
  • 5 tomatoes, chopped
  • 1/4 tsp ground turmeric
  • 1 cinnamon quill
  • 20.00 gm caster sugar
  • 27.20 gm sultanas
  • 1 tsp freshly grated ginger
Instructions:
  • In a frypan over medium-low heat, warm the ghee. Add curry leaves, mustard seeds, and chili, cook while shaking the pan for 1 minute until the seeds start popping. Stir in tomatoes and turmeric, cook for 1 minute. Add the rest of the ingredients and 1/3 cup (80ml) water. Bring to a boil, then simmer on low for 10 minutes, stirring occasionally until the chutney thickens. Let it cool before serving with the lamb curry.
