Ingredients:
  • 2 pints cherry tomatoes
  • 1 small white onion, chopped
  • 1 green onion, chopped
  • 0.5 teaspoon chopped fresh cilantro
  • 2 green chile peppers, chopped
  • salt to taste
  • 1 teaspoon lemon juice, or to taste
Instructions:
  • In a saucepan, place cherry tomatoes and add a thin layer of water. Bring to a boil over medium-high heat and simmer until tomatoes are soft and broken down.
  • Combine white onion, green onion, cilantro, and chile peppers in a bowl. Stir in hot cooked tomatoes and mix thoroughly. Season with salt, pepper, and lemon juice to your liking.
