Vibrant summer pasta salad bursting with fresh veggies.
Ingredients:
  • 6 cups water
  • 2 cups tri-color rotini pasta
  • 0.25 cup extra-virgin olive oil
  • 0.25 cup red wine vinegar
  • 1 teaspoon honey
  • 2 tomatoes, chopped
  • 0.5 sweet onion (such as Vidalia®), chopped
  • 1 cucumber, peeled and diced
  • 2 carrots, cut into bite-size pieces
  • 0.5 cup diced celery
  • 3 cloves garlic, chopped
  • 2 green onions, chopped
  • 2 tablespoons chopped fresh parsley, or to taste
  • 1.5 teaspoons chopped fresh cilantro
  • 1 pinch fresh cracked black pepper, or to taste
Instructions:
  • In a large saucepan, bring water to a vigorous boil. Add the rotini and cook for about 8 minutes until perfectly al dente; then drain. Rinse under cold water until fully cooled, then drain again before transferring to a large mixing bowl.
  • Combine olive oil, vinegar, and honey in a bowl and toss with pasta. Add tomatoes, sweet onion, cucumber, carrots, celery, garlic, green onions, parsley, and cilantro one by one for an even mix. Season with black pepper.
