Delicious veggie wraps with fresh veggies, mozzarella cheese, and avocado mayo. Customize with your favorite ingredients like rice or quinoa. Perfect for parties - easy, portable, and no need to refrigerate right away.
Ingredients:
  • 1 ripe avocado - peeled, pitted, and diced
  • 1 tablespoon mayonnaise
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.125 teaspoon cayenne pepper, or to taste
  • 8 (8 inch) flour tortillas
  • 2 tomatoes, diced
  • 1 cucumber, sliced
  • 1 green bell pepper, cut into strips
  • 1 head lettuce, chopped
  • 1 (8 ounce) package fresh mozzarella cheese, sliced
Instructions:
  • Create the spread by mashing together diced avocado, mayonnaise, salt, garlic powder, onion powder, and cayenne pepper in a bowl until thoroughly combined using a fork.
  • Spread tortillas with creamy avocado spread. Layer with diced tomatoes, cucumber slices, bell pepper strips, lettuce, and mozzarella cheese slices. Leave 2 inches at the bottom. Fold bottoms up and roll tightly to enclose fillings.
