Transform your breakfast routine with this quick and delicious one-pan dish: fry an egg, melt cheese, and warm tortilla. Top with salsa, jalapeños, cilantro, and green onions for a flavor-packed meal.
Ingredients:
  • 2 teaspoons butter
  • 1 large egg
  • 1/4 teaspoon taco seasoning blend, or to taste
  • 1 1/5 ounces shredded Cheddar cheese, divided use
  • 1 6-inch or 7-inch flour tortilla
Instructions:
  • Melt butter in a 10-inch nonstick skillet over medium heat, swirling to coat the bottom evenly.
  • Gently crack the egg into a buttered skillet and cook until the egg white is no longer transparent and the egg is solid enough to flip, approximately 1 minute.
  • Gently flip the egg, making sure to keep the yolk intact; sprinkle with taco seasoning and half of the cheese.
  • Carefully lay the tortilla over the egg and cheese and cook for around 1 minute. Then, smoothly flip the egg and tortilla together using a silicone egg turner.
  • Top the egg with the remaining cheese and cook until the egg reaches your desired doneness and the tortilla is warm and crispy, approximately 2 minutes.
  • Transfer the tortilla and egg onto a serving plate and enjoy while warm.
