Trending TikTok breakfast tacos: crispy corn tortillas with eggs and assorted toppings. Repeat-worthy dish!
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 (6-inch) corn tortillas
  • 2 large eggs
  • 1/4 cup Cheddar cheese, grated
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons salsa, for garnish
  • 1/2 avocado, thinly sliced, for garnish
  • Cilantro leaves, for garnish
Instructions:
  • Heat vegetable oil in a large skillet over medium heat. Add corn tortillas and cook for 10 seconds. Flip and cook for 4-5 minutes until golden brown and crispy.
  • Place one cracked egg on each tortilla in the skillet, cover, and cook for two minutes. Uncover, sprinkle cheese around the eggs, allowing some to spill on the skillet for extra flavor. Pour one tablespoon of water in the skillet, cover, and cook for another 60-90 seconds, until the cheese is melted and the eggs are cooked with slightly runny yolks.
  • Remove each taco from the skillet using a good spatula. Sprinkle with a pinch of salt and pepper, then add salsa, avocado, and cilantro on top. Serve while warm and enjoy! Feel free to leave us a star rating below if you enjoyed this recipe!
