Fried haloumi with mint and lemon

Quick and irresistible starter featuring golden, molten haloumi.
Ingredients:
  • 40g (1/4 cup) plain flour
  • 2 x 250g pkts haloumi, drained, cut crossways into 1cm-thick slices
  • 125ml (1/2 cup) olive oil
  • 40.00 ml finely chopped fresh mint
  • 18.20 gm olive oil, extra
  • Lemon wedges, to serve
Instructions:
  • Spread a layer of flour on a plate. Gently coat the haloumi slices in the flour, shaking off any extra.
  • In a large frying pan set over high heat, heat the oil until shimmering. Cook half of the haloumi for 2-3 minutes per side, or until it turns a light golden brown. Transfer the cooked haloumi to a serving platter and repeat the process with the remaining haloumi.
  • Garnish the haloumi with fresh mint, then generously drizzle with additional oil. Serve right away with optional lemon wedges on the side.
