Elevate veggies with flavorful walnut sauce.
Ingredients:
  • 2 slices white bread, crusts removed
  • 115g (1 cup) walnut pieces
  • 2 cloves garlic, crushed
  • 160ml (2/3 cup) olive oil
  • 60ml (1/4 cup) white wine vinegar
  • 750ml (3 cups) vegetable oil
  • 4 (about 760g) green zucchini, cut lengthways into 5mm-thick ribbon, patted dry with paper towel
  • 1 small (about 1.2kg) cauliflower, cut into florets
Instructions:
  • Briefly soak the bread in cold water, squeeze out excess water. Combine bread with walnuts and garlic in a food processor, blend until smooth. Add oil and vinegar, blend until combined. Season with salt and pepper.
  • In a large deep frying pan, heat oil over medium-high heat until a cube of bread turns golden brown in 10 seconds. Shallow fry one-third of the zucchini until golden brown, about 3-4 minutes. Transfer to a plate lined with paper towel using a slotted spoon. Repeat with the remaining zucchini in two more batches, reheating the oil between batches.
  • Heat the oil over medium-high heat until it shimmers, then fry one-third of the cauliflower florets until golden brown, about 3 minutes. Transfer to a plate lined with paper towel using a slotted spoon. Repeat this process with the remaining cauliflower in two more batches, making sure to reheat the oil between each batch.
  • Combine the cauliflower and zucchini in a large bowl, drizzle with the walnut sauce, and gently toss to mix well before serving.
