Ingredients:
  • 2 zucchini, quartered and sliced
  • 1 onion, sliced into rings
  • 0.5 cup all-purpose flour
  • 0.5 cup cornmeal
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 1 cup vegetable oil for frying
Instructions:
  • Mix the zucchini and onion in a large bowl.
  • Combine flour, cornmeal, salt, pepper, and garlic powder in a small bowl, ensuring they are thoroughly mixed.
  • Cover the zucchini mixture with the flour and shake the bowl until the vegetables are well coated. Allow the mixture to rest for about 30 minutes until a batter forms on the vegetables.
  • In a medium skillet over medium heat, sauté vegetables in hot oil until evenly golden brown.
