Indulgent, impressive cherry chocolate cheesecake with decadent frosting.
Ingredients:
  • 200g pkt chocolate biscuits
  • 100g butter, melted
  • 375g cream cheese, softened
  • 125g sour cream
  • 100g caster sugar
  • 2 eggs
  • 1 tsp vanilla bean paste
  • 70g dark chocolate, chopped (see note)
  • 70g caster sugar
  • 100g cherries, washed, dried
  • 1 eggwhite, lightly whisked
Instructions:
  • In a food processor, finely crush the biscuits. Add butter and blend until mixture is well combined. Press the crumbs into a 15 x 40cm rectangular fluted tart pan using the base of a glass. Chill in the fridge for 30 minutes to set.
  • Preheat your oven to 160°C. In a bowl, use an electric mixer to combine cream cheese, sour cream, and sugar until smooth. Mix in the eggs and vanilla until just combined. Pour the mixture into the pan and sprinkle with chocolate. Bake for 25-30 minutes or until set. Allow the cheesecake to cool completely in the turned-off oven with the door slightly open.
  • - Prepare a baking tray by lining it with parchment paper. - Pour the extra sugar into a shallow bowl. - Using a small brush, coat each cherry evenly with egg white. - Roll the egg white-coated cherry in the sugar to coat it evenly. - Place the coated cherry on the lined tray and continue with the rest of the cherries, egg white, and sugar. - Let them sit for 1 hour to dry.
  • Transfer the cheesecake onto a beautiful serving plate and artfully decorate it with frosted cherries before serving.
