Coconut frosted shortbread bars.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.5 cup white sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1 cup packed brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
  • 0.5 cup flaked coconut
  • 1 (4 ounce) jar maraschino cherries
  • 1 teaspoon butter
  • 1 cup confectioners' sugar
Instructions:
  • Preheat oven to 350°F (180°C) for a perfectly baked dish.
  • Combine flour, white sugar, and butter or margarine until the mixture is crumbly. Press the mixture into a 9 x 13 inch pan and bake for about 20 minutes, or until it turns lightly brown.
  • Whisk together eggs, sugar, salt, baking powder, and vanilla until smooth. Finely chop drained cherries, saving the liquid. Mix chopped cherries, nuts, and coconut into the egg mixture. Spread the mixture over the crust.
  • Bake for 25 minutes, then allow to cool.
  • Mix 1 teaspoon of butter and 1 cup of confectioner's sugar with cherry liquid until smooth. Frost the bars and garnish with coconut after the icing sets.
