Delicious cherry-walnut compote with shallots, honey, and Port, great with pork, chicken, or duck.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons minced shallots (can sub red onion)
  • 2 1/2 cups pitted sweet cherries, quartered
  • 1 cup walnuts, chopped
  • 1 teaspoon minced fresh rosemary
  • Salt and pepper to taste
  • 1/4 cup Port, red wine, kirsch, cassis, or cherry juice (or water)
  • 1 tablespoon honey
Instructions:
  • In a frying pan over medium heat, sauté the shallots in olive oil until they slightly brown on the edges, approximately 2 to 3 minutes. Stir occasionally during cooking.
  • Combine walnuts, rosemary, and cherries in the pan and stir. Reduce heat to medium and cook until cherries are soft, about 4 to 5 minutes, stirring occasionally. Season with black pepper and adjust salt to taste.
  • Add the Port, wine, kirsch or cassis, and honey to the mixture. Stir well. Simmer slowly until the cherries soften and the liquid thickens to a syrupy consistency.
