Elevate family dinner with savory sausage and cherry tomato risotto.
Ingredients:
  • Olive oil cooking spray
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 300.00 gm arborio rice
  • 1020.00 gm salt reduced chicken style liquid stock, simmering
  • 6 extra-lean beef sausages
  • 250g punnet cherry tomatoes, halved
  • 62.50 ml flat-leaf parsley, chopped
  • shaved parmesan cheese, to serve
Instructions:
  • Heat a heavy-based saucepan over medium heat, then lightly spray with oil. Add the onion and garlic, cooking for 3 to 5 minutes until they turn light golden in color.
  • Generously fold in the rice to envelop it in the flavorful onion mixture. Pour in a ladleful of steaming hot stock, stirring until the rice has soaked up the liquid. Repeat this process, adding one ladleful of stock at a time, allowing the rice to absorb the flavors until all the stock has been incorporated.
  • Heat a chargrill or frying pan over medium-high heat and lightly spray with oil. Cook sausages for 10 minutes, turning often, until cooked through. Slice thickly.
  • Combine the sausages, tomatoes, and parsley with the rice mixture. Remove from heat, cover, and let it stand for 5 minutes. Season with salt and pepper, then spoon into bowls and top with parmesan cheese before serving.
