Sweet cherry tomato and sausage bake

Herb-infused sausage bake with vibrant tomato sauce for an explosion of flavor.
Ingredients:
  • 2 kg lovely ripe cherry tomatoes mixed colours if you can find them
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh bay
  • 1 tablespoon dried oregano
  • 3 cloves garlic peeled and chopped
  • 12 higher-welfare Cumberland or coarse Italian pork sausages
  • extra virgin olive oil
  • balsamic vinegar
Instructions:
  • 1. Preheat the oven to 190°C/375°F/gas 5. Place tomatoes, herb sprigs, oregano, garlic, and sausages in a roasting tray. Drizzle with olive oil, balsamic vinegar, season with salt and pepper, and toss to coat. Arrange sausages on top and bake for 30 minutes. 2. Shake tray and turn sausages over. Bake for an additional 15-30 minutes until sausages are golden and sticky. 3. Adjust sauce thickness on the stovetop if needed. Check seasoning and serve with bread or alternative sides. 4. Store leftovers for a delicious pasta dish to enjoy the next day with penne or rigatoni.
