Elevate your burger game with this gourmet twist on a classic meal.
Ingredients:
  • 50g grape tomatoes
  • 50g cherry tomatoes
  • 9.20 gm olive oil
  • 6 thick beef sausages
  • 35g breadcrumbs
  • 40.00 ml plain flour
  • 4 bacon rashers
  • 4 eggs
  • 4 English muffins, split, toasted
  • 50g baby spinach leaves
Instructions:
  • Preheat the oven to 160°C. Place tomatoes in a roasting pan, drizzle with oil, and season with salt and pepper. Roast for 15 minutes until tender.
  • Peel off and discard the sausage skins, then mix the meat with breadcrumbs in a bowl. Divide into four portions, shape into 10cm discs with wet hands. Coat the patties by placing them in flour on a plate, and turning to cover evenly.
  • Preheat a large frying pan over high heat. Add the bacon and cook until crisp, about 2 minutes, turning occasionally. Remove to a paper towel-lined plate.
  • Cook the patties in the pan for 2 minutes per side until they are golden brown and cooked through. Then, transfer them to a plate.
  • Gently crack eggs into the pan, giving them space to spread, and cook to your desired doneness for 1-2 minutes. Take the pan off the heat.
  • Arrange muffin halves on individual serving plates. Layer with crispy bacon, a seasoned sausage patty, and a perfectly cooked egg. Finish with the remaining muffin halves. Serve promptly with a side of fresh spinach and juicy tomatoes.
