Savory egg muffins loaded with sausage, veggies, and cheese. Ideal for a satisfying brunch!
Ingredients:
  • 0.5 pound bulk pork sausage
  • 12 eggs
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper, or to taste
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Assemble all the ingredients.
  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining it with paper liners.
  • 1. Preheat a large skillet over medium-high heat. Add sausage and cook until it crumbles, browns evenly, and is no longer pink, about 10-15 minutes. Remove excess grease.
  • In a large bowl, whisk eggs until smooth. Add in onion, green pepper, salt, pepper, and garlic powder, stirring until combined. Gently fold in sausage and Cheddar cheese.
  • Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for 20-25 minutes or until a knife inserted near the center comes out clean.
