Ingredients:
  • 4 eggs
  • 1 tablespoon milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices sourdough bread (about 1/2 inch thick)
  • 1 tablespoon butter
  • 4 slices tomato
  • 2 oz Havarti or dill Havarti cheese, cut into 4 slices
Instructions:
  • In a medium bowl, whisk eggs, milk, salt, and pepper until well combined. Heat a nonstick skillet over medium heat. Pour in the egg mixture. Gently lift and fold the cooked edges with a spatula to allow the uncooked egg to flow to the bottom. Cook for 2 to 3 minutes until the eggs are thickened but still slightly moist. Avoid over-stirring.
  • Place a generous portion of eggs on one bread slice, then stack it with two slices of cheese, two slices of tomato, and top it off with the other bread slice. Finish by spreading 3/4 teaspoon of butter on the top of each sandwich.
  • Clean the skillet; then heat it over medium-high heat. Place the sandwiches in the skillet with the buttered side down. Spread the rest of the butter over the top slices of bread. Cook for 4 to 5 minutes until the bottoms are golden brown. Flip the sandwiches and cook for an additional 4 to 5 minutes or until both sides are golden brown and the cheese is melted.
  • Cut the sandwiches in half and enjoy while warm.
