Festive Easter bar cookies with walnut, cherry, and brown sugar filling.
Ingredients:
  • 1 cup butter, at room temperature
  • 3 large eggs
  • 1.5 cups light brown sugar
  • 0.5 teaspoon baking powder
  • 1 cup chopped walnuts
  • 0.5 cup maraschino cherries, drained and chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and cover a 10x15-inch jelly roll pan with aluminum foil.
  • Combine 2 cups of flour, butter, and white sugar in a large bowl until a smooth dough forms. Press the mixture evenly into the prepared pan to create the crust.
  • Bake in the preheated oven until the crust turns a light golden brown, approximately 12 minutes. Remove from the oven and allow it to cool.
  • In a large bowl, vigorously whisk eggs until fluffy for 2 to 3 minutes. Add brown sugar, 1/4 cup flour, baking powder, and salt; stir until the mixture is smooth. Gently fold in walnuts and maraschino cherries. Evenly spread the filling over the baked crust.
  • Bake until the filling is golden and set, approximately 20-25 minutes. Allow it to cool completely for 30-45 minutes before serving.
