Frozen make-ahead coffee ready to enjoy anytime.
Ingredients:
  • 2 cups crushed vanilla wafer cookies (50 cookies)
  • 1/3 cup butter or margarine, melted
  • 3 cups whipping cream
  • 4 teaspoons instant espresso or regular coffee granules
  • 2 tablespoons hot water
  • 2 packages (8 oz each) cream cheese, softened
  • 2 cans (14 oz each) sweetened condensed milk (not evaporated)
  • 1 cup frozen (thawed) orange juice concentrate
  • 2/3 cup chocolate-flavored syrup
Instructions:
  • Preheat the oven to 350°F. Combine crushed cookies with melted butter in a small bowl. Press the mixture firmly and evenly into the bottom of an ungreased 13x9-inch pan. Bake for approximately 10 minutes or until lightly golden brown. Allow it to cool completely for about 30 minutes before proceeding.
  • In a chilled large bowl, whip the whipping cream with an electric mixer on high speed until stiff peaks form. In a small bowl, stir the espresso granules into hot water until dissolved.
  • In a large bowl, whisk cream cheese until smooth on medium speed. Incorporate milk until well blended. Transfer 1 cup of the cream cheese mixture to a smaller bowl and gently mix in orange juice concentrate and 1 cup of whipped cream.
  • Combine the coffee mixture and chocolate syrup with the rest of the cream cheese mixture until velvety. Gently add the rest of the whipped cream. Pour the chocolate mixture over the crust. Dollop the orange mixture over the chocolate mixture, then create a marbled effect with a knife.
  • Chill in the freezer for a minimum of 3 hours until solid. Cut into 5 rows by 3 rows for serving portions.
