Frozen berries with hot-toddy cream

Ingredients:
  • 500g mixed frozen berries
  • 80.00 ml redcurrant jelly
  • 300ml cranberry or apple juice
  • 10.00 gm arrowroot
  • 300ml thick cream
  • 57.20 gm honey
  • 40.00 ml Drambuie or whisky
  • 6 slices plain sponge cake or brioche
Instructions:
  • Combine berries, redcurrant jelly, and juice in a saucepan over low heat. Stir for 5 minutes until jelly dissolves. In a separate bowl, mix half of the arrowroot with 1 tablespoon of cold water, then add to the berries. Cook until the mixture slightly thickens. Allow it to cool before using.
  • Combine cream, honey, and Drambuie in a saucepan over low-medium heat, simmer for about 5 minutes until slightly reduced. Mix remaining arrowroot with 1 tablespoon cold water, add to cream mixture, and cook for 1-2 minutes.
  • Serve the cake by cutting it into small pieces and layering it in 6 glasses with berries, then drizzle over the warm toddy cream.
