Frozen gaytime cheesecake recipe

Indulgent frozen Gaytime cheesecake - a nostalgic milk bar dessert elevated to the ultimate party showstopper!
Ingredients:
  • 250g pkt Arnott’s Butternut Snap Cookie
  • 100g butter, melted
  • 380g can Nestlé Caramel Top ‘n’ Fill
  • 500g cream cheese, at room temperature, chopped
  • 600ml ctn thickened cream
  • 150g dark chocolate, chopped
  • 8 Streets Golden Gaytime ice-creams
  • Bought caramel sauce, to serve
  • Dark chocolate shards, to decorate (see notes)
Instructions:
  • Prepare the cake pan by greasing a 20cm square pan and lining it with 2 layers of baking paper, ensuring the paper overhangs by 5cm above the sides. Use a food processor to finely chop the biscuits, then transfer them to a bowl. Mix in the butter until well combined. Press the biscuit mixture evenly onto the base of the pan. Chill in the fridge for 30 minutes.
  • In a bowl, combine caramel and 200g cream cheese and beat with electric beaters until smooth. Then, add 180ml cream and continue beating for about 1 minute until the mixture thickens.
  • Smooth the luscious caramel cheesecake mixture over the biscuit base and refrigerate until firm, about 30 minutes.
  • Combine sugar, vanilla, and the rest of the cream cheese in a bowl and beat with electric beaters until smooth. Pour in the 300ml remaining cream and beat for about 1 minute until it thickens. Spread the vanilla cheesecake mixture over the caramel layer, ensuring the surface is smooth. Freeze overnight or until firm.
  • In a small saucepan, combine the chocolate and remaining cream. Stir over low heat for 2-3 minutes until the mixture is melted and smooth. Allow it to sit for 5 minutes to cool.
  • Allow ice creams to sit at room temperature for 3-5 minutes to soften before gently removing sticks. Spread chocolate mixture over the vanilla layer and then arrange the ice creams on top. Place in the freezer for 30 minutes to set. Let the cheesecake sit at room temperature for 10 minutes to soften before drizzling caramel over it and topping with chocolate shards.
