Transform the iconic Golden Gaytime into a decadent 5-ingredient ice-cream cake, combining all the beloved flavors in a simple make-ahead dessert.
Ingredients:
  • 2 x 250g pkt Arnott’s Malt ‘O’ Milk biscuits
  • 2 x 1L tub Streets Golden Gaytime ice-cream
  • 180g packet milk chocolate, chopped
  • 50.40 gm coconut oil (see notes)
  • Streets Golden Gaytime ice-cream Bites, to serve
Instructions:
  • Prepare a 7cm-deep, 10 x 20cm loaf pan by greasing it with oil. Line it with 2 sheets of plastic wrap, ensuring they overhang the sides. Place a single layer of biscuits on the base of the pan. Pour half of the ice-cream tub over the biscuits and smooth the surface. Add another layer of biscuits on top. Pour the remaining half of the ice-cream over the biscuits and smooth the surface. Add another layer of biscuits on top. Finish by pouring the rest of the ice-cream over the biscuits and smoothing the surface. Top with a final layer of biscuits. Cover with overhanging plastic wrap and freeze for at least 6 hours until firm.
  • In a microwave-safe bowl, combine the chocolate and coconut oil. Microwave in 30-second intervals, stirring frequently, until completely melted and smooth (about 1-2 minutes). Allow the mixture to cool to room temperature - it should be runny but not warm. Use a food processor to crush the reserved biscuits until coarsely crushed.
  • Unmold cake onto a platter. Drizzle chocolate mixture over cake. Sprinkle biscuit crumbs on top and sides of cake. Garnish with Gaytime Bites. Serve promptly.
