Elevate the classic Aussie treat with a decadent Golden Gaytime ice-cream dessert! Make ahead for best results.
Ingredients:
  • 300ml thickened cream
  • 4 egg yolks
  • 59.40 gm brown sugar
  • 1 tsp vanilla bean paste
  • 2.50 gm ground cinnamon
  • 8 Golden Gaytimes, sticks removed, plus extra 3 chopped, to serve
  • Honey, to serve
Instructions:
  • Prepare a 7cm-deep, 9cm x 25.5cm (base) loaf pan by greasing and lining it with baking paper, allowing for a 6cm overhang on each side.
  • Whip the cream with an electric mixer until soft peaks form, then transfer it to a bowl and set aside.
  • In a clean bowl, use an electric mixer to beat eggs, egg yolks, sugar, vanilla, and cinnamon on high for 6 to 7 minutes until thick and pale. Gently fold in the whipped cream.
  • Spread half of the Gaytimes on the base of the prepared pan. Pour the cream mixture into the pan, then sprinkle the remaining Gaytimes on top. Freeze overnight.
  • Let semifreddo rest at room temperature for 2 minutes before unmolding onto a serving plate. Sprinkle extra chopped Gaytime and drizzle with honey on top. Serve promptly.
