Indulgent Gaytime trifle with layers of butterscotch and caramel, a showstopper Christmas dessert. Prep ahead for ease.
Ingredients:
  • 3 x 600g bought caramel mud cakes, icing removed
  • 125ml (½ cup) butterscotch schnapps
  • 2 x 250g ctn mascarpone
  • 900g ctn double thick vanilla custard
  • 1L tub Golden Gaytime ice-cream
  • 600ml ctn thickened cream, whipped to soft peaks
  • 80ml (⅓ cup) bought butterscotch sauce
  • 100g pkt Golden Gaytime popcorn
  • 10g (1/4 cup) Golden Gaytime Coco Pops
  • 2 individual Golden Gaytime ice-creams
Instructions:
  • Prepare the cake layers by trimming the top off one cake and cutting it in half crossways to form two semi-circles. Arrange one of the semi-circles in the base of a 20cm (top measurement) 3L (12 cup) trifle bowl, positioning it against the side to leave a gap in the center. Cut two triangles from the other cake and use one triangle to fill the gap in the center, creating an even layer of cake.
  • Whisk the mascarpone in a bowl until smooth using a balloon whisk. Mix in the custard. Drizzle half of the schnapps over the cake. Spread half of the custard mixture over the cake. Repeat with the remaining cake, schnapps, and custard mixture.
  • Scoop the Golden Gaytime ice-cream generously over the custard layer using an ice-cream scoop. Top with a dollop of cream and drizzle generously with butterscotch sauce.
  • Garnish the cake with popcorn, Coco Pops, and individual Golden Gaytime ice creams. Serve right away.
