Elevate your Aussie toffee ice-cream experience to a whole new level!
Ingredients:
  • 200g white chocolate, finely chopped
  • 125g unsalted butter
  • 3 eggs
  • 300g (2 cups) plain flour
  • 100g (1/2 cup) caster sugar
  • 70g (1/3 cup) brown sugar, firmly packed
  • 53.60 gm golden syrup
  • 400g Bubbly Honeycomb chocolate, finely chopped
  • 60ml (1/4 cup) vegetable oil
  • 125g malt biscuits, coarsely crushed
  • 2 x 400ml pkt Golden Gaytime 4-pack ice-creams
  • Caramel spread or sauce, to serve
  • 75g (1/2 cup) plain flour
  • 40g (1/4 cup) self-raising flour
  • 55g (1/4 cup, firmly packed) brown sugar
  • 10.00 gm cocoa powder
  • 90g butter, melted
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line an 18cm square cake pan with baking paper, leaving a 2cm overhang on the sides.
  • Create the chocolate base by mixing flours, sugar, and cocoa powder in a large bowl. Blend in the butter until fully incorporated. Press the mixture into the pan and bake for 15 minutes until firm to the touch.
  • Lower the oven temperature to 160C/140C fan forced. Melt the white chocolate and butter together in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir until smooth and melted. Let it cool slightly before using.
  • Combine eggs and flour with the cooled chocolate mixture, whisk until fully incorporated. Split the mixture into 2 parts. Stir caster sugar into one part until combined. Mix brown sugar and golden syrup into the other part until combined. Alternate spooning heaped spoonfuls of the mixtures onto the chocolate base. Bake for 1 hour and 10 minutes, or until a skewer comes out slightly sticky. Allow the slice to cool completely in the pan.
  • In a microwave-safe bowl, combine honeycomb chocolate and oil. Microwave on high for 1 1⁄2 minutes, stirring every 30 seconds, until smooth. Spread the mixture evenly over the slice, sprinkle with crushed biscuits, and refrigerate for 1 hour to set.
  • Grab a Golden Gaytime and gently remove the stick, repeating with the rest. Place them in a 9.5 x 19.5cm loaf pan, overlap them, press to seal edges, and freeze for 2 hours or until firm.
  • Cut the slice into squares, top with scoops of the Gaytime ice-cream, and drizzle with caramel sauce before serving.
