Zesty gluten-free frozen lemon dessert with layers of sugar-free goodness. Perfect for summer entertaining.
Ingredients:
  • 125ml lemon juice
  • 20.00 ml finely grated lemon rind
  • 75g sweetener
  • 150g unsalted butter, at room temperature, chopped
  • 240g almond meal
  • 40.00 gm monk fruit sweetener, extra
  • Pinch of salt
  • 100g unsalted butter, extra, melted, cooled
  • 475ml tub Denada Sugar-Free Vanilla Ice Cream
  • Strawberries, quartered, to serve
  • Toasted flaked coconut, to serve
  • Mint leaves, to serve
  • Lemon or lime zest, to serve
Instructions:
  • Combine the egg, egg yolks, lemon juice, lemon rind, and sweetener in a heatproof bowl. Whisk until mixed. Add the butter and place the bowl over simmering water. Stir until smooth and well combined. Keep stirring for 10 mins until the mixture thickens. Strain through a sieve into a clean bowl. Let it cool for 5 minutes, stirring occasionally. Cover the lemon curd with plastic wrap, chill in the fridge for 2 hours.
  • Preheat your oven to 180°C. Grease a 23cm fluted tart tin with a removable base. In a bowl, mix almond meal, extra sweetener, and salt, then create a well in the center. Add extra butter and use a spatula to combine. Press the almond meal mixture evenly over the base and side of the pan. Chill for 20 minutes until firm. Bake the tart case for 15-20 minutes until light golden. Let it cool for 30 minutes before moving on.
  • Spread a generous layer of lemon curd over the tart case. Use a large metal spoon to create flat ice cream pieces and layer them on top of the lemon curd. Drizzle most of the remaining lemon curd over the ice cream. Repeat with the rest of the ice cream and lemon curd. Freeze for an hour, cover with plastic wrap, and freeze overnight until firm.
  • Place the beautiful tart on a serving plate and generously sprinkle with fresh strawberries, coconut flakes, a few sprigs of mint, and the zesty essence of lemon or lime.
