Yogurt enhances the flavor of sweets with its tangy zing.
Ingredients:
  • 141.90 gm caster sugar
  • 3.00 gm powdered gelatine
  • 750.00 ml plain yoghurt
  • 1 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 1 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 1 tsp finely grated orange rind
  • 21.00 gm orange juice
Instructions:
  • In a saucepan over low heat, gently mix sugar and 1/3 cup of cold water until sugar dissolves, about 2 to 3 minutes. Take off the heat and transfer it to a bowl. Sprinkle gelatine into the mixture, stir until dissolved. Let it cool for 5 minutes. Then add yogurt and whisk until well combined.
  • Divide the mixture into three 5cm-deep, 12cm x 18cm plastic containers. Stir lime rind and lime juice into one container, lemon rind and lemon juice into a second container, and orange rind and orange juice into the last container. Cover the surface with plastic wrap and then with foil. Freeze for 3 hours until almost firm. Stir mixtures with a fork to break up ice crystals, cover, and freeze for an additional 3 hours until firm. Let it stand at room temperature for 10 minutes before serving.
