Indulge in zesty lemon curd ice cream for a citrusy treat.
Ingredients:
  • 500g thick Greek-style yoghurt
  • 2 eggs
  • 2 egg yolks
  • 165g caster sugar
  • 80g butter
  • 2 lemons, zested and juiced
Instructions:
  • In a saucepan, whisk together whole eggs, yolks, and sugar until smooth. Place the pan over low heat and add butter, lemon juice, and zest. Whisk continuously until the mixture thickens. Strain through a sieve into a sterilized jar and let it cool.
  • In a large bowl, combine yoghurt and lemon curd in a rippled effect. Transfer the mixture to a plastic container or mould, and freeze overnight. Prior to serving, allow it to soften in the fridge for 20-30 minutes.
