Frozen mango and vodka cocktails

Indulge in a tantalizing mango cocktail.
Ingredients:
  • 4 large mangoes, peeled, flesh chopped
  • 125ml (1/2 cup) water
  • 80g (1/2 cup, firmly packed) finely chopped palm sugar
  • 240g (2 punnets) raspberries
  • 500ml (2 cups) vodka
Instructions:
  • Arrange the diced mango pieces evenly on a tray and let them chill in the freezer for about 3 hours or until they are completely frozen.
  • In a saucepan over low heat, gently mix the water and sugar until the sugar dissolves, about 2 minutes. Increase the heat to medium-high and let it boil uncovered for 5 minutes until the liquid reduces by one-third. Remove from heat and allow it to cool slightly for 10 minutes.
  • Blend the raspberries and sugar until smooth in a blender jug.
  • In a blender, combine half of the frozen mango and vodka and blend until smooth. Transfer the mixture to a large jug. Repeat the same process with the remaining mango and vodka.
  • In serving glasses, alternate layers of mango and raspberry purees, then serve right away.
