Ingredients:
  • 1 x 250g punnet strawberries, hulled, washed, halved
  • 1 x 180g pkt good-quality white chocolate, finely chopped
  • 250ml (1 cup) thickened cream
  • 70g (1/3 cup) caster sugar
  • 100g good-quality white chocolate, extra
  • 125ml (1/2 cup) thickened cream, whipped, to serve
Instructions:
  • Puree the strawberries in a food processor or blender. Set aside.
  • Melt chocolate in a heatproof bowl set over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until smooth, then remove from heat.
  • Whip cream with an electric beater until firm peaks form in a bowl. Gently strain strawberry puree over the cream using a fine sieve. Fold in chocolate with a balloon whisk until well combined.
  • In a large bowl, use electric beaters to whip the eggs and sugar until they are thick, pale, and creamy. Gently fold half of the egg mixture into the chocolate mixture until just mixed, then repeat with the remaining half. Divide the mixture into serving glasses, smooth the surface, cover with plastic wrap, and freeze for 4 hours until set.
  • Let parfaits sit at room temperature for 10 minutes to soften. Use a vegetable peeler to create chocolate curls. Dollop whipped cream on parfaits and garnish with chocolate curls. Serve promptly.
