Lime & frangelico parfait with white chocolate wafers

Create a delicious dessert using pantry basics and frozen berries.
Ingredients:
  • 125g punnet raspberries
  • 125g punnet blueberries
  • 250g punnet strawberries, washed, hulled, halved
  • 21.00 gm fresh lime juice
  • 6 fresh makrut lime leaves, shredded
  • 80ml (1/3 cup) Frangelico liqueur
  • 1L mango gelato
  • 50g (1/3 cup) plain flour
  • 60g (1/3 cup) pure icing sugar, sifted
  • 1 egg white
  • 30g butter, melted
  • 30g white chocolate, melted
Instructions:
  • In a large bowl, mix the berries with lime juice, lime leaf, Frangelico, and sugar. Gently toss the ingredients together. Cover the bowl with plastic wrap and refrigerate overnight for the flavors to meld.
  • Preheat your oven to 180°C. Trace two 10.5cm circles on a non-stick baking paper. Place the paper, pencil-side down, on a baking tray.
  • In a bowl, mix together flour and icing sugar. Create a well in the middle and add egg white. Stir until combined. Mix in butter and chocolate until smooth and thick. Spread 2 teaspoonfuls of the mixture onto each disc. Bake for 5 minutes, or until pale golden. Allow to sit for 30 seconds, then roll into a cigar shape. Let it cool and harden. Repeat with the rest of the chocolate mixture.
  • Spoon the berry mixture and gelato into individual serving glasses, and accompany with the wafers.
