Upgrade classic ice cream sandwiches with a sophisticated twist.
Ingredients:
  • 1.75 cups graham cracker crumbs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup butter
  • 1.25 cups packed brown sugar
  • 0.25 cup white sugar
  • 0.25 cup finely chopped pecans
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 4 ounces frozen strawberries
  • 1 cup whipped cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while you mix graham cracker crumbs, flour, baking soda, salt, and cinnamon in a bowl. Keep it aside for later.
  • Using an electric mixer, blend the butter, brown sugar, and 1/4 cup of white sugar in a large bowl until smooth. Add the first egg and blend well, then incorporate the vanilla with the second egg. Gently mix in the flour until just combined. Fold in the pecans until evenly distributed. Place spoonfuls of the dough 2 inches apart on ungreased baking sheets.
  • Bake in the oven until golden brown, approximately 9 minutes. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Whip together the cream cheese and 1 cup of sugar until smooth. Puree the strawberries and gently fold them into the cream cheese mixture, followed by the whipped cream.
  • Spread the cheesecake filling on a graham cracker cookie, then sandwich it with another cookie. Repeat until all sandwiches are assembled. Freeze for a minimum of one hour before serving.
