Frozen Strawberry Jam

Whip up a fruity, pectin-free jam with frozen strawberries, sweetener, and zesty lemon juice.
Ingredients:
  • 2 (16 ounce) packages frozen sliced strawberries
  • 3 squeezes lemon juice
  • 1 cup granular sucralose sweetener (such as Splenda®), or to taste
Instructions:
  • In a pot over low heat, gently warm strawberries with lemon juice. Mash with a potato masher as they soften. Stir in sweetener to taste once desired consistency is reached.
  • Turn up the heat to medium and bring the mixture to a rolling boil. Let it simmer until it thickens and reduces, which should take about 10 to 15 minutes.
  • Chill a small plate in the freezer while the jam cooks.
  • Spread a thin layer of jam on a chilled plate and swipe your finger through the middle. If the jam quickly comes back together, cook for an additional 5 to 10 minutes until thickened. If the jam stays separated, it's ready to be served.
