Indulge in a slice of delicious, fluffy perfection.
Ingredients:
  • 450.00 gm self-raising flour
  • 5.00 gm mixed spice
  • 1.80 gm salt
  • 85.00 gm sultanas
  • 82.50 ml currants
  • 193.13 gm milk
Instructions:
  • Preheat your oven to 220°C / 200°C fan-forced and lightly dust a baking tray with flour.
  • In a large bowl, whisk together flour, mixed spice, and salt. Add sultanas and currants, then mix well. Combine milk and 3/4 cup cold water in a jug. Create a well in the center of the flour mixture and pour in the milk mixture. Using a flat-bladed knife, gently stir until a soft, sticky dough forms (be careful not to overmix).
  • On a lightly floured surface, shape the dough into two smooth 15cm round loaves. Place them on a prepared tray.
  • Bake for 25 minutes, or until the loaves produce a satisfying hollow sound when tapped. Transfer to a wire rack and enjoy warm.
