Indulge in a sweet and sticky fruit pie with a cinnamon-sugar crust, showcasing flavorful apples and apricots within spiced bread.
Ingredients:
  • 140g (1 cup) chopped dried apricots
  • 125ml (1/2 cup) cold water
  • 170g caster sugar
  • 1.2kg (about 6) Granny Smith apples, peeled, quartered, cored
  • 2.50 gm ground cinnamon
  • 16 slices white bread, crusts removed
  • 80g butter, melted
  • 90g (1/4 cup) apricot jam
Instructions:
  • Preheat your oven to 180°C, and generously grease a 20cm round springform pan that's 8cm deep.
  • Combine apricot, water, and sugar in a saucepan. Stir over low heat until sugar dissolves. Bring to a boil, then simmer. Add apple and cook covered until tender. Cool before serving.
  • Mix cinnamon and the rest of the sugar in a shallow bowl. Brush melted butter on both sides of the bread. Coat bread with the sugar mixture. Arrange bread around the side of the pan, slightly overlapping, reserving 4 slices. Layer the reserved bread on the base, overlapping slightly.
  • Fill the apple mixture in the center. Bake for 30-35 minutes until golden and crispy. Glaze the top with jam, then bake for an additional 5 minutes until sticky and golden. Let it cool in the pan for 1 hour.
