Apple and apricot pie

Cozy up with a delicious apple and apricot pie perfect for winter days.
Ingredients:
  • Icing sugar, to serve
  • 2 sheets shortcrust pastry
  • 800g can apple pie fruit
  • 250.00 ml dried apricots, chopped
  • 5.00 gm ground cinnamon
  • 36.00 gm white sugar
  • 1 egg, lightly beaten
Instructions:
  • Preheat the oven to 200°C. Grease a 3cm deep, 20cm (base) pie dish and line it with 1 sheet of pastry, trimming the edges. Cover the pastry with a sheet of baking paper and weigh it down with uncooked rice. Bake for 10 minutes. Remove the baking paper and rice, then bake for an additional 10 minutes or until the pastry is a light golden color. Allow it to cool before using.
  • Mix together fresh apple slices, dried apricots, aromatic cinnamon, and a generous spoonful of sugar until well combined. Gently transfer the mixture into the prepared pie crust. Lightly brush the edges of the pastry with water for a beautifully golden finish.
  • Cut 12 strips from the leftover pastry, each about 2cm thick. Create a lattice pattern on top of the pie with the strips. Brush the lattice with egg and sprinkle with the remaining sugar.
  • Bake until golden, about 20-25 minutes. Dust with icing sugar before serving warm or cold.
