Tangy pineapple juice marinade gives meat a tender, tropical flair.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 0.5 red bell pepper
  • 0.25 cup brown sugar
  • 1 teaspoon garlic
  • 1 tablespoon dry mustard
  • 0.5 cup cider vinegar
  • 4 cups pineapple juice
  • 1 (16 ounce) jar pineapple fruit preserves
Instructions:
  • Sear onions and red peppers in savory olive oil until golden. Stir in brown sugar, garlic, mustard, and cider vinegar until aromatic. Cook on high for a minute until bubbly. Mix in pineapple juice.
  • Let your chosen meat marinate overnight or for up to 24 hours.
  • Grill while basting often with the marinade. Towards the end, top with preserves and let it caramelize slightly.
