Fruit salad with nut ricotta cream

Shareable dessert - great for gifting or gatherings!
Ingredients:
  • 42.00 gm fresh lemon juice
  • 2 passionfruit, halved
  • 2 ripe bananas, peeled, cut into 1cm-thick slices
  • 2 ripe nectarines, halved, stone removed, cut into wedges
  • 150g fresh berries (such as raspberries, blackberries or youngberries)
  • 250g fresh low-fat ricotta
  • 30g (1/4 cup) hazelnut meal
  • 57.20 gm yellowbox honey
  • 0.63 gm ground cinnamon
Instructions:
  • For the nut ricotta cream, combine fresh ricotta, hazelnut meal, honey, and cinnamon in a medium bowl. Whip with an electric beater until airy and smooth. Transfer to an airtight container.
  • In a medium bowl, mix together lemon juice, passionfruit pulp, bananas, and nectarines until well combined. Transfer the mixture to an airtight container and garnish with fresh berries before sealing.
