Delicious fresh scones with ground cloves, perfect with jam and cream.
Ingredients:
  • 525.00 gm self-raising flour
  • 82.50 ml raisins
  • 1/2 tsp Cloves Ground, plus 1/2 tsp extra
  • 40.00 gm caster sugar
  • 80g chilled butter, chopped
  • 390.00 gm buttermilk
  • 300ml thickened cream
  • 32.00 gm brown sugar
  • Plum jam, to serve
Instructions:
  • Preheat your oven to 220C/200C fan forced. Prepare a 20cm square cake pan by greasing and flouring it.
  • In a large bowl, combine flour, raisins, clove, and caster sugar. Add butter and use your fingertips to mix until the mixture resembles fine breadcrumbs. Create a well in the center and pour in the buttermilk. Use a flat-bladed knife to stir until the dough almost forms. Transfer to a lightly floured surface.
  • Gently knead the dough until it just comes together. Press it out to a 4 cm-thick round. Dip a 6 cm round cutter in flour to prevent sticking, then cut out the scones. Gently press any leftover dough pieces together and repeat to make a total of 12 scones.
  • Place the scones in the prepared pan and bake until light golden and they sound hollow when tapped on top, about 20 minutes.
  • Beat together cream, brown sugar, and extra clove until soft peaks form.
  • Top split warm scones with cream and jam, if desired.
