Spiced buttermilk oatmeal scones: perfect for a brunch topped with sweet fruit.
Ingredients:
  • 2 cups all-purpose flour
  • 1.25 cups quick-cooking oats
  • 0.5 cup packed brown sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup butter-flavored shortening
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 tablespoon confectioners' sugar
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet with parchment paper.
  • In a large bowl, mix flour, oats, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg. Cut in shortening until a few chunks remain. Stir in buttermilk and vanilla extract until combined.
  • Form dough into individual scones, each measuring 3 inches in diameter and 1 inch thick. Place them on the baking sheet.
  • Bake until golden brown in the preheated oven for 15 to 20 minutes. Allow to cool for 5 minutes before lightly dusting with powdered sugar.
