Delicious buttermilk oatmeal muffins with quick oats, perfect for a hearty and easy breakfast loved by all.
Ingredients:
  • 2 cups quick-cooking oats
  • 2 cups buttermilk
  • 2 eggs, beaten
  • 1 cup packed brown sugar
  • 0.5 cup butter, melted
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
Instructions:
  • Combine the oats and buttermilk in a spacious bowl and let it sit for 15 minutes.
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a 24-cup muffin pan by greasing or lining with paper liners.
  • In a small bowl, blend together eggs, brown sugar, and butter; add to the oat mixture. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt; gently fold into the oat mixture until just combined. Fill muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
