Nutritious muffins made with whole wheat flour, oats, and wheat germ for flavor and texture, with minimal sugar.
Ingredients:
  • 1 cup buttermilk
  • 1 cup rolled oats
  • 0.5 cup raisins
  • 1 cup whole wheat flour
  • 0.25 teaspoon salt
  • 3 tablespoons wheat germ
  • 0.33333334326744 cup butter
  • 0.25 cup packed light brown sugar
  • 1 tablespoon honey
Instructions:
  • Mix together the buttermilk, rolled oats, and raisins in a bowl. Cover the bowl and refrigerate for 8 hours or overnight.
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a 12-cup muffin tin.
  • Take the buttermilk mixture out of the refrigerator and combine flour, baking powder, baking soda, salt, and wheat germ in a bowl.
  • Cream the butter and brown sugar in a spacious mixing bowl until fluffy. Incorporate the honey and egg, and blend thoroughly.
  • Alternate adding the flour mixture and buttermilk mixture to the mixing bowl with the butter mixture, stirring until the batter is fully combined.
  • Spoon batter evenly into each section of the muffin tin.
  • Bake in the oven until golden brown and set, for 22-28 minutes.
