Crispy cornmeal oat pancakes topped with berries and maple syrup.
Ingredients:
  • 2 cups buttermilk
  • 1.5 cups rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup cornmeal
  • 2 teaspoons baking powder
  • 1.5 teaspoons white sugar
  • 0.5 teaspoon salt
  • 2 eggs, beaten
  • 0.25 cup vegetable oil
Instructions:
  • Combine buttermilk and oats in a large bowl and let it sit for about 5 minutes. Mix in flour, cornmeal, baking powder, sugar, baking soda, and salt. Add eggs and vegetable oil, and stir until just combined.
  • Preheat a greased griddle over medium-high heat. Spoon large dollops of batter onto the griddle; cook until bubbles appear and edges are dry, approximately 3 minutes. Flip and cook until golden brown on the other side, around 3 more minutes. Continue with the rest of the batter.
