Satisfy your cravings with these delicious oatmeal, cinnamon, and whole wheat buttermilk pancakes.
Ingredients:
  • 2.25 cups rolled oats
  • 2.5 cups buttermilk
  • 1.5 cups all-purpose flour
  • 0.75 cup whole wheat flour
  • 0.33333334326744 cup white sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon salt
  • 0.75 teaspoon ground cinnamon
  • 3 eggs
  • 0.75 cup milk, or more as needed
Instructions:
  • Combine the rolled oats and buttermilk in a large bowl and let it soak for 15 minutes.
  • Combine the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt in a separate large bowl and whisk together.
  • In a separate small bowl, whisk the eggs and milk together, then combine with the soaked oats. Gradually stir in the flour mixture until well incorporated. If the batter is too dry, slowly add milk, 1 tablespoon at a time, until you reach the desired consistency.
  • Prepare your skillet or griddle by greasing it before heating over medium. Pour approximately 1/2 cup of batter for each pancake onto the heated surface. Cook until the pancake is golden brown, around 2 minutes, then flip and cook the other side for another 1-2 minutes until perfectly browned.
