Buttermilk Oatmeal Waffles

Fluffy egg whites transform hearty oat waffles into a light and satisfying breakfast.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 cups rolled oats
  • 3 tablespoons white sugar
  • 2 tablespoons baking powder
  • 1.5 teaspoons salt
  • 4 eggs, separated
  • 1.5 cups buttermilk
  • 0.5 cup butter, melted
  • 1.5 teaspoons vanilla extract
Instructions:
  • Preheat the waffle iron as directed by the manufacturer and combine flour, oats, sugar, baking powder, and salt in a large bowl.
  • In a separate bowl, whisk the egg yolks and set aside the egg whites in another bowl. Combine buttermilk, milk, and melted butter with the egg yolks, and mix well. Pour the buttermilk mixture into the flour mixture and beat until the batter is smooth and combined.
  • Whisk egg whites and vanilla extract in a glass or metal bowl until soft peaks form. Gently fold in half the egg whites into the buttermilk batter until fully incorporated, then repeat with the remaining half.
  • Pour batter onto hot waffle iron and cook until golden and crisp, approximately 5 minutes. Place waffle on paper towel-lined plate to keep it crispy, then make more waffles with the rest of the batter.
