Impress your loved ones with a succulent pork roast filled with sweet dried fruits.
Ingredients:
  • 3-pound pork boneless center-cut loin roast (not tied)
  • 1 cup mixed dried fruits (apples, apricots, figs)
  • 2 tablespoons finely chopped onion
  • 1 teaspoon kosher salt
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon coarsely ground pepper
  • 2 tablespoons vegetable oil
  • 1 cup apple cider
  • 2 cups purchased pork gravy
Instructions:
  • 1. Preheat the oven to 350°F. Place the pork, fat side up, on a cutting board. Make a horizontal cut through the center of the pork almost to the opposite side, then open the pork like a book. Layer the dried fruits and onion inside the opening. Fold the halves of the pork together and tie with kitchen twine at 1-inch intervals. Place the pork fat side down. Combine salt, thyme, cinnamon, and pepper in a small bowl, then rub the mixture into the pork.
  • 1. Heat oil in a roaster over medium-high heat. Sear pork until browned all over. Pour in 2 tablespoons of apple cider. Cook pork, turning regularly, until cider caramelizes and pork surface darkens. Repeat with another 2 tablespoons of cider. Pour in the remaining cider and insert a meat thermometer into the thickest part of the pork.
  • Bake the pork covered for 1.5 to 2 hours until no longer pink in the center and the thermometer reads 155°. Rest the pork covered with foil for 15 minutes until the temperature reaches 160°. Serve with Apple Cider Gravy.
